Fasting a.m. blood sugar 139; weight 166.2
Plan: egg fast
Breakfast: one scrambled egg, mocha coffee. Lunch: Egg and cheese quiche, 1/2 cloud bread, 2 1/2 homemade parmesan crackers. Feeling like cooking today so tried quiche, cloud bread and also parmesan crackers. Both turned out fine - hubby liked the quiche and crackers. I liked the cloud bread too; I put those in the freezer for later. Think I'll make some more of the crackers for Christmas dinner. I think the grand kids will like them. Supper: Sonic hot chocolate and mixed nuts. Too much hot chocolate today, but it did taste good with that north wind howling.

Can you tell me how to make your Parmesan crackers?

Parmesan crackers are so easy to make! I mixed one teaspoon of Italian seasoning with a package of shredded parmesan, dropped heaping tablespoons of the cheese onto a pan lined with parchment paper, baked them in a 425 degree oven for about six minutes. You have to watch them carefully or they will burn. Also, you should be able to use other seasonings with them, but I've only tried the Italian. My grandson loved them and ate nearly all of them.
