Vicki- have you ever seen, read about, or foraged for purslane. The little known wonder food. It grows everywhere here— parking lots, the beach, patio cracks. Often times right next to it is a very similar looking weed called spurge which is toxic. So many things that are edible by indigenous peoples in the past that we did not carry forward into the “modern” world.

I have, and I think purslane is nasty 😝. Something that grows common is lamb quarters and lady's thumb (you will recognize the little pink flower). I use those a lot. Amaranth is a good one. Dock and poke when its still young are good. Just can't get past the salty and sour of purslane though.

I have not tasted it because I’m not that confident in my identification skills. Glad for your input

Looks tasty. But I would have to replace the tofu with actual meat :-/ I might try it with that one change.
