Lotus's Journal, 15 January 2008

Hey ya'll whats up? I don't know why but I've had cookies on the brain today! I fought against the idea for a while, but finally decided to compromise and make an acceptable version. i made peanut butter and oatmeal cookies with natural peanut butter, 1/2 cup margarine, 3/4 cup oat flour(I ground it in the blender), 1/4 cup oat bran, 1 egg, 1 egg white, 1/2 cup splenda, 1/4 cup brown sugar splenda blend, salt, vanilla, and baking powder. They're not bad, a little crumbly, and not incredibly sweet, but they are good. I'm having 4 with a cup of soy milk. To atone for my "sins" I'm having egg whites and raw brocolli for dinner. Bleach. Hope I don't regret this later..

I did a cookie recipe for Christmas that was good n tasty and not to guilty. 6 cups of honey bunches of oats cereal, 1 cup honey, 1 cup natural p. butter and think I threw in some butterscotch chips, but I would use mini chocolate ones or p. butter ones next time, mix it all together and make drop cookies out of them, no bake! :) Easy and filling and satisfying. Think I found it on a diabetic website and my sugars stayed stabilized too!! They are a bit "soft" or gooey, but still yummy!! :)

Those sound good! I love Honey bunches of oats. I might try that, with sugar free maple syrup instead of honey.
