So, I'm sitting at school on campus right now, trying to figure out what my issue is - I don't feel like I've been losing much weight, and maybe I haven't been good about recording my food like I should, but I really don't think I'm going over my calories or anything.

We did start eating more natural food - we cut out the use of splenda and sugar, and use honey now. We cut out using butter and margarine by using olive oil. Now, my boyfriend was getting a little carried away with the olive oil - using it like, all the time, trying to "fry" in his cast iron, but I told him to knock that shit off and measure the amount of EVOO he uses in each meal - so, now I'll have a better idea of how much of that.

But I've also been basically snacking on our home-made granola. It's not really granola, we just take oats, mix them with chopped almonds and for like 1 cup of oats (2 servings), we mix in... maybe max 1/4 cup of honey, usually less - just enough to get it lightly coated and sweet - then we bake it. The oats don't stick together, there isn't that much honey, but it's a nice snack food - and I think it'd be EXCELLENT with some milk - like a toasted oat cereal, but literally, it's three ingredients - whole oats, raw almonds and raw honey. Bam - done. So I've been eating a lot more fiber with the oats. We also have been opting for cheeses - good cheese, which I know has alot of calories in it, but Wasa crackers and goat cheese are amazing. So, now I'm just trying to use as little cheese as I can and still get the effect. Today I will NOT forgot to record anything.


And I don't know if anyone will read this, but I have one issue with today: My mom made some homemmade split pea soup. I think, she just boiled down the ham bone we had for Christmas dinner in water, then added the peas, carrots, celery and onions. From what I've read - something like chicken stock, made from boiling down a chicken and then straining it, has very few calories. I wonder if it's the same for "Ham stock"? I'm trying to make sure I recorded my soup right - I want to be able to eat recipes that someone else made without it messing up my whole day. So anyway - I don't think my mom strained the ham stock for the fat because we were freezing it and whatnot - but honestly, when it settles out, there seems to be very little fat on the surface. So if anyone has an idea of how to record this better - I'd be game to hear it.

I hope I get to finish my Wii Workout 30 day challenge tonight. I've still been getting my steps in, except for the day after our 10 mile hike... that day I only got 8000... but, yesterday I was a little bummed cause I only got 19 minutes of aerobic steps in. I guess it's just getting adjusted to the whole school-workout schedule again after being off for so long. I just don't feel myself losing anything lately. I feel like I've been a lot better about sticking to my calories... but... damn. I'd like to see myself get back to my stupid goal weight, I'm a bit frustrated. Makes me wonder if all the junk in diet food makes you shed weight because your body just can't incorporate it or something... Ugh.
