If you are wondering why I'm eating portabella mushrooms breakfast, lunch and dinner, My wife and I both bought them on the same day. She doesn't eat mushrooms so I have 6 big caps to eat. I thought about chopping one up for an omelet, but I love them grilled. I grilled up some eggplant slices too, threw some sausage crumbles on along with American cheese and spinach. Then I put two over easy eggs on top. So what do you call this? Reverse mushroom omelet? Breakfast portabella stack? What ever you call it, it was really good and really filling. At over 400 calories it isn't a light breakfast. I definitely need a bike ride this morning.

Looks absolutely FAB! I love me some Portabella mushrooms. :)) I would put a slice of avocado in there instead of the sausage, and voilà......a Vegetarian dish! I am totally digging this! Thanks for the idea PoulC!

I was thinking about the avocado! I have a half in the fridge, but it all cooked fast and just grabbed what was at hand (American cheese, really?!?!) Next time I will try the avocado for sure.

You did great for grabbing what was on hand. That looks ridiculously GOOD! All that oozing yolk. Mmmm! I love eggs too. We have our own chickens and I use eggs a lot. I probably would swap out that cheese too. American cheese=no bueno. Maybe Swiss, Gruyère?

I can eat the same thing forever. One diet trick is monotony and hope for food fatigue to set in. Hmm. Be true to one food and you start losing interest and eating less and wanting something different? There has to be a life lesson here somewhere

Père Joseph... I had to look that one up. Well, it ain't American cheese, but it will probably do in a pinch. HAHA! My Father was from Denmark and my mother was first generation Swedish, so I was exposed to many cheeses that most Americans were not. I was going to have this again this morning, but to my horror I didn't have any avocado! Perhaps the dinner version tonight sans eggs.

Looks like a Mushroom Eggs Benedict ! What a wonderful substitute for the canadian bacon and the english muffin. I am going to have to so this

I love mushrooms sauteed grilled or any other way its a good thing we just ate otherwise I would be making myself a few poached eggs Yummy!!!

@PoulC......That version sans eggs sounds great too. The Père Joseph is my husband's cheese, but I am allow to sneak a slice or two for myself. LOL! He eats a ton of dairy and I eat it 2-3X/week. Nice background....Danish and Swedish. I didn't know much about cheeses until I moved to Europe. Gruyère is one of my favorites.

Definitely give it a try. It is way easy. Here are some helpful hints. I spray the mushroom and eggplant slices lightly with olive oil. Watch the eggplant very closely. It tends to burn easily. However, I have eaten the pretty black pieces and they don't taste as bad as they look! I put a bunch of spinach in a plastic bag and nuke it 30-40 seconds to heat it and get it a little wilted. Use better cheese than American. If you try it let me know how it turns out. Good luck!
