My experiment with baking a keto compliant treat resulted in mixed results. The cakey brownies were pretty good. The erythritol did not seem to spike insulin, though I didn't test. Having treats did tempt me to eat them, but because they were essentially nuts, cocoa, butter and eggs, they were real food and ver low carbs, so I just had them as meals and tracked it.
Conclusion? I think I'd rather just eat nuts and chocolate. It's a lot less trouble and perhaps more satisfying and certainly clearer to track. I did lose weight, so it wasn't a disaster. But I think it's better to just keep it simple and eat the ingredients.
The erythritol was not that delicious that I'm going to go out of my way to try it again soon.
