Hi ya'll! Beautiful day today, could not have asked for more perfect weather, clear blue skies, 75 degrees and breezy, azaleas, wisteria, dogwoods, red-bud trees - all blooming. Our trees are leafing out with those pale green leaves that announce loudly that spring has sprung. It smelled amazing! I had shopping to do so I took a leisurely drive into the huge metropolis of Vidalia, GA. Windows down, music loud I head-bobbed my way into town while sight-seeing all the signs of spring. It was a good day. I have been browsing recipes on Pinterest and found one for bacon wrapped stuffed chicken breasts. I had a roast in the crock-pot so today's dinner was already done. I prepped the chicken for dinner tomorrow. Stuffed them with pepper-jack cheese, a chopped mushroom and some diced smoked ham, raw they look fabulous. I have never been much of a fancy cook, but I am tired of all of the ways that I cook chicken and this looked so yummy and so LCHF that I had to try it. I'll let you know how it turns out. Even though I have already eaten, I'm tempted to toss them in the oven tonight to see how they turn out! LOL, I'm not going to do that, but it's nice planning ahead and looking for new and tasty ways to prepare the foods that I already eat. Hubby is still not smoking and not eating bread. I don't know if he has lost weight, but his tummy is less bloated and (TMI) his flatulence has decreased dramatically. It's all good. You guys have a great night.

Sounds like a perfectly lovely day on all counts!! Plus, you're ahead of the game and have most of the work done for dinner tomorrow. AND...hubby is doing well on all counts as well. Definitely a day to feel good about. How are your brother and Casper doing?

LOL! Suzy! I'm still here, just doing some reading before bed! I hope you are having a lovely morning! Vickie, Lonnie and Casper are doing fine, the water is gone and they are trying to pick up the pieces. He lives out in the woods in a Camper and he said he's supposed to get another one from FEMA so it's just a matter of trying to salvage what he can and move into the next camper. Nothing washed away, it all just got soaked and covered with mud.

What a lovely day you are having in Georgia. I am so envious! We had dangerously high winds last night and lost power. I am so afraid the new cherry blossoms froze off the trees. It is quite cold. Thank goodness we have our generator. Have a fabuous day! Oh! Your chicken dish sounds heavenly!!!

Debra, from your earlier post about Lonnie, that was what it sounded like the outcome would be. I hope FEMA is able to come thru for him sooner rather than later so he can start getting a little better situated. I'm hoping that some things were washable and salvagable. Hope you enjoy your dinner this evening...I swear Pinterest is a major hub of food porn!

I'm about to pop the chicken into the oven, in about an hour and a half I'll let you know how it turned out! My mouth is watering even as I type! :) Mom, we had bad weather all around us on Friday, tornado warnings, hearing the sounds of thunder and lightning cracking to the ground. It never made it to us, we just got a lovely rain. Then your cold front blew out the nasty stuff and gave us this lovely cool spring breeze that are keeping the temps in the mid to low 70's. Thank you for sharing your cool weather with us or we would still be sitting in the middle of a week long drizzle! I hope you didn't have any wind damage. I have sit through 5 hurricanes in my lifetime. I have had enough of windstorms.

OMG it was so yummy, hubby is still smacking his lips over it. That will definitely become a favorite, I was thinking of all the different stuff I can stuff in it. It's a shame that I am 51 years old and I have never tried to make things like this!

Okay you must post the entire recipe from start to finish and the oven temps and everything or give the website you got the recipe from. I have always wanted to try one of those stuffed chicken breast recipes, too.

You and Hermoines Mom have inspired me! She has written about using Trader Joes Bruschetta and I loved the sound of your stuffed chicken. So tonite in the oven I have breasts stuffed with a LF string cheese and bruschetta. I see a whole new world of chicken dishes opening up here ;-) Yours sounded so incredibly delicious that will probably be next.
