Who said diets dont taste good?

Idk how to directly reply 😬 but here's the recipe: 1 can hearts of palm 1 can chickpeas Olive oil Cumin Salt Pepper 18pcs great value small frozen shrimp Oregano Garlic powder Onion powder Lemon juice Parmesean Heart of romaine Tapatio - preheat oven to 420°f - cover 2 baking sheets with foil - thaw shrimp however you prefer - slice a full (drained) can of hearts of palm to desired thickness (I do like 1/4inch wide, and I halve pieces with a bigger diameter) - dump hearts of palm and a full (drained) can of chickpeas on a baking sheet. - drizzle 2 tsp olive oil over them - add 1 tsp each of salt, pepper, cumin - mix and arrange in single layer - put in the oven on the middle rack and set the timer for 10 minutes. - while that's going, add 1 tsp of olive oil to the 2nd baking sheet and move the sheet around to spread it out as much as possible. - add shrimp in one layer in top of the oil. - add 1 tsp each oregano and garlic powder and 2tsp onion powder - drizzle 2tsp lemon juice on top - add 4tsp grated Parmesean - mix and arrange in single layer - when the timer goes off, shake the tray to loosen the beans / hearts of palm. - move tray to lower rack and add shrimp in on the top rack. - cook for 5 minutes, check to see if beans have started to get firm. If so, pull out. If not, cook another 3 minutes. Shrimp will need a total of 11 minutes. Beans should not take more than 18 total. - after all is cooked, create 3 lettuce tacos using 2 romaine leaves for each. Add bean mixture then 6 shrimp to each taco. Top with pan juices from the shrimp and Tapatio hot sauce. I used around 1/4 of the bean mixture in total (had the rest as lunch the following day). My total calories for this meal were 346.
