One of my favorites! Chicken, black beans, chimichurri sauce, cheese, sour cream, and some tomatoes. My go to lunch. Sometimes I sub green salsa for the chimichurri to change the flavor and drop the calories a bit. Both are delicious!

I need the fat and it's not a lot of calories (only about 30 with the amount I use) so I'm good with it for now. Thanks for the idea, though! I may use it elsewhere.

Hot. My husband cooks big batches of the beans and chicken and freezes them so I defrost and heat up, then top with the toppings.

It's just grilled chicken and black beans! Plus toppings. Super easy and you can always buy the chicken and beans pre-made. He makes huge batches of the chicken and beans and freezes them so I can pull them out and defrost then top as I want.
