@Bunnyrabbit69 - I keep it pretty simple. The only thing i do with the slaw is to substitute mustard instead of mayo to avoid the excess fat. I love mustard so it works for me but probably not a taste for everyone. For 1 cup of slaw I add 1 TBL of mustard, 1 tsp of apple cider vinegar, salt and pepper to taste. Quick and easy.

@bunnyrabbit69 - Guss I should say I also use the precut Dole Cabbage Mix which I believe only has green and purple cabbage with shredded carrot.

Joel - I make a tofu-based mayonnaise-type dressing that's considerably lighter in calories than real mayo, and doesn't have all the processed ingredients in commercial light mayo. If you're not opposed to tofu, you might Google some recipes. Mine is from the Veganomicon cookbook, and it takes all of 5 minutes to make. Has some fat from olive oil in it, but not much. I've found it lasts a while in the fridge. Not nearly as long as actual mayo, but considerably longer than the cookbook says it does

honeebuns, TBH I'm not sure. We have a tendency to use food until it smells off or grows mold 🤪 Yeah, I know...not what the food safety experts recommend! So I don't keep real good track of how long things stay in my fridge. All I know is that it makes a good-sized batch, and we finish it before it goes bad.

I like the look of your coleslaw

Hunneebuns - the cabbage mix I use normally expires in about 10 days. That would be the only ingredient that I'd worry about. The mustard and vinegar would be good much longer than that.

I haven't ever tried mustard on shredded cabbage mix. I will give it a try! thanks
