Hubby and I have both tried soy many times and can't get into it. I'm really picky so I get it. Him, not so much. I like edamame the best - a little in a salad.

I eat steamed edamame in salads once in a while but I prefer it as a roasted and dried “nut” and love that. I include the “nuts” as a salad toppings and also include it in my granola mix, Kinda like corn nuts. I put one ounce of tofu in my lunchtime smoothie, mix it in with scrambled eggs, and add it to my homemade spaghetti sauce along with roasted eggplant and just a small amount of ground beef. I also slice extra firm tofu, brush it with a blend of the juice of an orange or a small cutie and honey then fry it in a bit of olive oil till brown then lightly roll in sesame seeds. You can eat it just like that or cube it up for salads. Lots of ways to eat this type of stuff and get the benefits if their great nutritional value..

Shirfleur1– I subscribe to or follow way too many newsletters like this. Trusted sources. It is a challenge to keep up on all of this stuff, but I love it. I took a semester long class on sports nutrition and learned a whole lot. Nutrition is a fascinating subject.

I love roasted edamame but I can't find it anymore. I too would add it to salads but alas, it is not available anywhere I have gone. In fact, if I inquire about it, I am looked at like I have three eyes (I do have only two).

Order it on Amazon. I buy the Picksweet brand . Surprising, they actually carry it at all my stores but I usuall byy it at ROSS’s Marshals or TJ max for much cheaper than stores or Amazon.

I love edamame! I rarely eat soy as that is something that Mayo told me to limit my intake on due to the type of cancer I had. Everything in moderation I guess!
