For a light lunch you could make cheese or chicken quesadilla’s. I use carb balance tortillas for mine. If you like salads, try browning some lean ground beef or ground turkey then add taco seasoning and make a taco salad. I also make my own egg and chicken salad. Hopefully these are helpful for you.
