I made a high protein powder cocoa concoction, resembling a dessert, to get more protein. I made it too tasty, as I finished all six servings, 2 servings at a time, in the last 2 days. (I should have put the individual servings in the freezer... which I will do the next time I make it.
Here is my recipe. Hi-Protein Brownie Pudding with Walnuts & Chia Seeds
Mix dry ingredients: 24g whole wheat flour, 2 scoops Protein Powder, 3 level tbsp. cocoa, 1.5 tsp. baking powder, 3 level tbsp. Monk sugar Extract Sweetener
Mix wet ingredients: 2 large eggs, 1.5 cups plain Greek yogurt 2%, 1 tsp. vanilla, 1 heaping tbsp. chia seeds, 1/8 cup chopped walnuts.
Mix wet into dry. Spread in small square pan (microwave & oven safe), brushed with Pam or other grease, or line with silpat or parchment.
Microwave on high for 90 seconds. Transfer to pre-heated 375 convection toaster oven or oven and cook for ~25-30 minutes. Take out when edges are dry but centre still a little gooey, testing with knife. Let cool for 10 minutes before eating. Cut into 6 pieces. Each serving is 154 calories. 15g protein. (PS I did not microwave for whole cooking time as I was concerned it would dry out too much.)
