This is a Honey Buckwheat bread that I made half a recipe of. Turned out great but I have decided Buckwheat is not a favorite. I tried pancakes and now bread. It was so easy but won’t make it again.

An acquired taste for sure. I'm taken back to my childhood whenever I get the opportunity to eat them. Gotta have Apple Butter (fresh is best) or real maple syrup for the topper. For the bread a sweet honey butter might be a good flavor profile as well.

I wanted to work with it because I have a friend who has true celiac disease, not what many people say thy have. But I think you are right— an acquired taste or something you grew up with

It tastes good mixed with wheat flour, but that, of course is not gluten free. For celiac you could cut it with a gluten free flour blend (usually based on rice, nuts or corn).

The recipe that I made was half the buckwheat flour and half bread flour but the recipe did mention that for completely gluten free to use the blend as you mentioned.
