Blueberries & red grapes with homemade Greek yogurt and Icelandic rye bread, topped with pecans. Didn't hit my fiber goal with it and ate a little early for my normal 12-hour window, but a better dose of protein than I've been getting

I am on my third batch of bread. This last one had such a tough crust that I used my electric knife to slice through it. Not sure why. The taste was wonderful though and everyone I have shared it with loves it.

my fat ass thought it was chocolate cake 😂😂😂 nothing beats homemade bread 😍 tough crust... probably temp was too high or you left too long in the oven either way ... looks great, your bread 😊

Are you covering it in foil, Kenna, since you don't have the pan? Before I bought it and I was just using a bread pan, that's what I did. The bits that lopped over the edges got hard, but not the rest of it. Still, this recipe does tend to have a tough crust

miss kittycat -- no cake for breakfast, but...there was a big event where I work last night, and the break room is filled with cake and crackers and chips and cheese. I didn't go to the event, but I'll probably partake of leftovers 😉

Although I haven't been eating many sweets lately so I'm unused to them. Tasty, but it didn't settle well 😕

Wrtingwyo—- yes, covering the bread with an inverted small toaster oven cookie sheet. Just the crust was hard, the rest of the bread is perfect. I am going to buy the pan though. The first couple of times I made it I used an aluminum bread pan and then switched to my 9 inch Corning ware pan. Love this bread.
