What I made tonight...A Chocolate & Coconut MIM Cake!!!
With a cream cheese frosting! Yummy!!!
Since Fat Secret NEVER approves ANY of my recipes, here's what I did to make this gem:
Ingredients3 Tbsp. unsweetened coconut
1/4 cup golden ground flaxseed meal
2 Tbsp. heavy whipping cream
5 drops liquid sucralose (using Splenda adds +5 carbs)
1 Tbsp. unsweetened cocoa
1 Tbsp. butter
1 large egg
1/2 tsp baking powder
2 ounces regular cream cheese
DirectionsPut aside the cream cheese.
Mix all other ingredients together in a bowl. Pour into a separate bowl with a shot glass in the middle or another microwave-safe object (never use plastic!)
Microwave for 1 minute and 25 seconds.
Soften 2 ounces of cream cheese and use for an icing. Refrigerate to firm up the icing.
