Today I was gifted a Kuri squash. I decided to roast it with my last honey crisp apple and a pear. A little olive oil in a bowl with some brown sugar SWERVE , ancho chili powder and a spice mix I make , and 2 tablespoons of bourbon. Boy did it come out great. Served with wild rice blend and pork chops with a light dusting of honey mustard mixed with Mayo . Avocado and tomatoes completed the feast. BF was Impressed.
