Are those rice or mung bean noodles? Is that roe sprinkled on top? looks intriguing.

Hi Peggy, those are Miracle (yam) noodles from Costco (6 pack). Only 5 cal/ serving and quite filling. They don’t have that slightly fishy smell that occurs with some yam noodles. and you are correct, that is roe on top. 😊 I bought the roe in case my kids would be eating at home but they’re too busy these days!

Thanks for responding! Even more intrigued now. I didn't know yam noodles were a thing I'll head to my local Asian grocery and take a look. Are they usually dry or in the refridgerated section? I did get some cellophane noodles recently, but this looks much better calorie wise.

Peggynan, I had not thought of them as a noodle substitute though it’s been an ingredient in food that I’ve had in the past! The Miracle noodle brand is generally available and seems to have less of a certain smell from the yams. I think they add citric juice, not sure. in any case, it’s good to have some lime/lemon infused water on hand for soaking.
