Equal parts of 📍Figs, 📍Raspberries and honey cooked down with a good splash of 📍Orange juice and fresh grated 📍Ginger (I add some fresh tumeric root in mine as well and put in the orange zest)

I love figs. I used to have access to unlimited amounts. Sadly, no longer. Yours sounds great

Hi. Would you share the cook time & ratio of fruit & honey? Your recipe looks good.

ACBelleRose it depends upon how many figs I get from my tree but I will give basic ratios 1 cup each figs, raspberries and honey 1/4 cup OJ or 2 Tbsp OJ frozen concentrate 1-2 Tbsp orange zest (what you can get from an orange) 1 Tbsp fresh grated ginger 1 Tbsp fresh grated tumeric root Cook it at medium low heat until figs are very soft and raspberries are fallen apart, reduce heat and continue to cook until liquid look thick on the back of a spoon. You can speed the process by adding the peel of a green apple (pectin) and remove the peel at the end. Put in jars hot and seal with melted parrifin. You can do a lower calorie freezer jam by trading out the honey for 2 cups of diced pear - this is less sweet and will last a week in the refrigerator.

Thx for sharing. I used to make ginger/citrus fig jam for my family, but I never enjoyed it myself. Adding raspberries & pear sound good. fresh turmeric is harder to find in my neck of the woods. Will definitely keep an eye out.

Tumeric is seasonal in Asian marts but once you get your hands on some you can grow it on the window seal - the plant is pretty. Same is true for ginger but fresh grow it hotter.

I'm in zone 7. I have a very lite green thumb. I have yet been successful in growing ginger or turmeric. My pole beans, kobucha and cukes are producing, but is getting late summer blight. My lemongrass is doing well, I'm told it helps with insulin resistance, which I'm slowly introducing to my hubby's diet. I do not endorse anything, but I believe we are what we eat, eat or drink. I believe in growing what we can for ourselves if possible. We dont have alot of growing space. I do what I can in planters. Soil is contaminated by neighbors who dont grow food and use chemicals, detergents and pour it in the ground. It's alot of work, sometimes I get frustrated and lazy about the upkeep. I have to remind myself all the sweat comes with a reward or harvest.

What is turmeric coffee may I ask?

Frog jam is figs, raspberry, orange peel, and ginger. My son buys it for me from ash county store. Tumeric coffee is where I put some tumeric in my k cup with my coffee. I am adding foods that help reduce inflammation and tumeric is one of them.
