Hi Shereen Donede, this meal looks perfect! I love that you sometimes do vegetarian or vegan meals, like this one. Did you use firm tofu? and how is the consistency once blended?

Hi Ivy. I love my vegan cuisine. I was vegetarian for most of my teenage years and early 20's butI now include white meat/ostrich/white fish into my diet, but eating vegetarian feels most familiar to me, and with A-blood types for both my husband and I it's a more natural fit for us. This was used with silken tofu. I drain it first. The texture when blended was beautiful and creamy. I could have roasted the garlic and onion for longer before including. I also added a splash of almond milk to the mixture. Fried up the shrooms first and then added the sauce before adding the cooked pasta and peas and spinach to wilt.

@lilynations the product is called Happy Earth. You can get the small boxes from Dischem or the big 1kg bags from Faithful to Nature (am online store that delivers)
