Making bread again with my sourdough starter. Need to baby my wrist but I think I can manage the kneading. It is something I do well, and knowing that it will turn out beautifully is soothing. It is also like alchemy, letting the little critters digest sugar and starch and make bubbles.

I think the fundamental problem is so many people have no love and respect for food. There is no bad food. (There are certain things, like cheese flavored spread, 100-calories snack cakes, etc. that should not be counted as food).

A fresh slice of earthy homemade bread slathered with pasture butter is one of my favorite indulgences, especially when it is cold and snowy outside. 265 calories? I will make room for it. ;-)
