One of my big challenges has been the fact that my husband does not eat seafood (or raw tomatoes, lamb, etc.). I've finally become better about saying - honey I'm having seafood tonight - you are on your own. Tonight though - I was super excited to modify a recipe that we both could love. It was Real Simple's Parchment wrapped scallops. Instead of using fresh tomatoes I used canned roasted tomatoes and in his parchment package I put thinly sliced chicken breast. I browned the chicken breast in the frying pan before putting the parchment so that there was the tiniest bit of pink in the middle.

It turned out perfectly and we both enjoyed a delicious meal together - mine scallops, his chicken!
