The cake is definitely good...not really angel food texture, more like a lighter pound cake.

With 8 servings, it runs less than 200 calories and slightly over 2 net carbs....and that's even with the glaze!! I have the full recipe nutritional amounts saved separately as a favorite meal for both cake and glaze as well as separate entries for both the cake and glaze as 1 serving out of 8. All amounts are as I made the cake, including my additions and substitutions.

She states this can make 12-15 servings and I'd say you could do up to 16, realizing that they'd be pretty small slices. Interestingly, she states that the calorie count PER SERVING for just the cake is 114, based on that 12-15 servings, but that's exactly the calorie count PER SERVING I got for mine based on 8 servings. Perhaps it's because I couldn't find the unsweetened vanilla almond milk, so substituted the original flavor of unsweetened almond milk. Or perhaps it's because I used a different brand of whey protein powder....I don't know.

I'd be very interested to try this with the unsweetened vanilla almond milk, as I think it would intensify the vanilla flavor in the cake.

The cake came out of my bundt pan without any problems whatsoever.

I might try baking this for 5 minutes longer.

For the glaze, I used the almond milk, not the cream, and had to add 1 more tbsp to thin the consistency a bit.

For the glaze, I added 4 Truvia packets.

For the glaze, in the future, I'd reduce the amount of vanilla extract...seemed a bit too much per the recipe.

I recommend getting fresh strawberries and using a few cut in half to top the cake; pureeing the rest to enjoy with the cake.

In lieu of fresh strawberries, I wondered if one couldn't take a tablespoon or so of no sugar added preserves and add it to the glaze to make the entire glaze fruit-flavored.

I just checked out that site. Thank you so much for sharing with us. Everything there sounds and LOOKS delicious. Do you think I could use the unsweetened Almond Breeze instead of the vanilla almond milk? I bet it would be good too. She sure does have lots of goodies there. Can't wait to give some of them a try. I know what you mean Laurie...I love it all!!! Next up on my list to try is that baby corn bread to go with some Atkins-friendly soup DH made up. It's also the bread that's used in her stuffing recipe. But, back to the cake...I used unsweetened "original" Almond Breeze because I could not find the vanilla flavor in unsweetened, so "yes" I know that unsweetened Almond Breeze works and that's the product reflected in my favorite meals. DH wondered if we could freeze some of the cake, but the way it's disappearing, I don't think we'll have to!!

I am glad that the cake was a hit. Since the Almond Breeze will work. I'm going to give it a try. I can't find the vanilla flavor either. What's up with that? lol Thanks again for sharing. :)
