Sandy701's Journal, 26 November 2010

Had a great Thanksgiving and stayed on plan all the way. Even DH, who had doubts that we could have a "real" Thanksgiving meal on Atkins, had to admit we did pretty darn good: turkey, fresh green beans with almonds, mashed cauliflower, and Stef's Caramel Pumpkin Dessert. I found that terrific stuffing recipe too late or I'd have tried that out too.

I was excited to see a number of journals already reflecting eating on plan on Thanksgiving and hope there will be more similar journals. I had feared a rash of "Well, I blew it...," and "Ate way too much pie...," etc. Glad to see that's not happening (yet??).

So, I'm really very proud of my WOE in the last couple days. All in all we did great at DH's work luncheon on Wednesday, taking all Atkins-friendly foods and we did great yesterday for the main event. I didn't exercise on Wednesday, but walked 3.1 miles yesterday and have already done my 3.3 miles today. A front is due in the next few hours that will drop our temperatures by 20 degrees. But for now, at 10:30AM, it's 77 degrees (!!!) and quite humid.

More good news is that my weight dropped back down to 184 again yesterday and I've stayed there today. These 180's are way too sticky for my liking. I hope this is not an omen of the decades to come. I'm certainly not setting any weight-loss records this month but at least a couple of pounds have dropped.

Hope everyone has a good weekend and doesn't spend too much $$$$!!! LOL!!!

Sandy the only thing I had that was questionable was wine, but even at that I only had 26.62 grams of carbs. I was so pleased with myself. Hubby did the same! I agree about the 180's, although I was pleased to see that when I got up this morning the scale was reading 187.5 which is the lowest so far....let's just hope it continues to fall. Glad that you had such a successful Thanksgiving....now on to CHRISTMAS!!!lol

Oh, and what stuffing recipe? I would really like to find one.

Not sure if I can link it, but you'll get the gist. You make "baby corn" bread first and then use it to make corn bread stuffing. The "baby corn" bread looks really good all by itself. The link is mariahealth.blogspot.com/search?q=baby+corn+bread. The carb counts are listed and seem good, but I haven't verified them myself.

OK...the last part of that after the "/" is "search?q=baby+corn+bread". I'm sure you can find it once you get on the blog.

So glad to hear that you were able to stay on plan for your holiday. I was amazed that I did as well as I did. I put everything in my food diary this morning and WOW. I impressed myself.lol If we did this well for the Thanksgiving Feast, then we can pull it off for Christmas too. I have faith in us.:)
