I cooked chicken breast rolled with a half a stick of low fat mozzarella cheese, some plain chicken breasts for chicken salad, turkey meatloaf (made in muffin pans), steamed some fresh carrots and cooked some hard boiled eggs. I now have a variety of food ready to go for the next 4 days of work. I have all my other healthy foods on hand so packing lunches and staying true to my plan shall be easy peasy~

My biggest challenge will be what to eat tonight because it all looks and smells so good!

Will you please please please come back to Michigan and cook for me? We had coneys for dinner but I opted for a large Greek salad with grilled chicken, dressing on the side. But truth be told, turkey meatloaf sounds yummy especially on these cold Michigan days. Send your recipe when you have your next 7 days off!

Sounds great!! I wished you come to SC and cook for me too...that is the toughest part for me..the cooking...I hate it so much :( But I find it easier to cook a couple of things at a time to get it out the way.

Sometimes when I read all the things that people are doing I wonder what the heck is wrong with me? I do have a little issue with cooking as you know I live with my son in law and daughter and when I cook anything you can bet there will be nothing left over and I best get mine or it won't be there later. I struggle with whether or not I even want to be here. It sounds like you have got yourself so together and I am dreaming of the day when I can feel that way too. Have a wonderful day :)
