Still doing good but really learning a lesson in artificial sweeteners. After all is said and done, finally switched 100% to erythritol with a GI of 0! Also, made the switch to almond and coconut flour and I feel the difference.

Made Low carb macaroons and probably will work on low carb meringue cookies soon. Pumpkin cheesecake turned out good as did the raspberry but thin mints so far are a total failure!

What is erythritol and where do you get it?

Erythritol is one of the safest sweeteners other than Stevia. Both of those have a 0 Glycemic Index. The Erythritol has less of a bitter flavor and has the ability to cook better in baking things such as merengue. Other than ordering from Amazon, the only company that makes it that I have easily found it Truvia. A lot of people use Splenda because it's cheaper however, maltitol and maltodexteron have a very high GI. This is why so many people get weight loss to stop on low carb diets.

Truvia is available at most grocery stores. I had to real every label in the store until I found Erythritol after my research. Wal-Mart even has it.

Thank you for that information. I thought Truvia was made with stevia and sugar. I will try to find some and see if it works for me.
