Just started week four of being really good. I wasn't really hungry for breakfast, so I just had a cup of coffee with some heavy cream.
For lunch I discovered something quick and tasty. I had bought some boneless, skinless chicken breasts that were on sale and I drizzled them with olive oil, and seasoned with salt, pepper and garlic powder. I then put them on a cookie sheet and baked at 350 F until an internal thermometer read 165 degrees. That took about 20-25 minutes.
I then had them ready to use for meals or snacks. So today I looked in the fridge and saw that I had some Marinara sauce and some mozzarella cheese. I grabbed a cooked chicken breast and put about 3 Tbs of sauce over it, then put some of the cheese and microwaved it until hot and bubbly. It literally took 2 minutes for a hot and tasty meal. I will definitely be eating that again and might include a small salad with it.
