Wow, finally think I have found the perfect dessert for low carb. Raspberry cheesecake with almond crust. Hopefully the experiment works out well.

Good news, it was a hit. The crust was 1 cup of almond flour and 2 tbl melted butter and baked at 400 for 8 minutes. The filling was 1 pkg sugar free instant jello dissolved in boiling water. Mix 2 packages of cream cheese until smooth, add 1/2 cup whipping cream, then slowly add the dissolved jello. Pour into pie crust and let set two hours. I used a large pie pan and divided it into 8 servings.
