How do you cook it. Mine has always come out tough.

I grill it. Take it off when the center gets to the consistency of the fat pad under your thumb when your hand is in a fist. Believe me it works every time. If you have your hands straight out that's well done just your fingers flex that's medium and when you fist your hand it's rare. Wrap it in foil for a few if you want it a little more cooked.
