Muffin in a Minute(MIM)

Ingredients:
1/4 Cup flaxseed meal
1/2 Teaspoon baking powder
1/2 packet granular sugar substitute 
1 Teaspoon ground cinnamon
1 large egg, beaten
1 Teaspoon butter, melted

Directions:
Mix the flax meal, baking powder, sugar substitute and cinnamon in a coffee mug or single-serving soufflé dish. (I've used the bread shaped sandwich keeper from lunchboxes to get the "bread" shape.)Add the egg and butter (or oil). Mix with dry ingredients.Microwave 1 minute or more, until firmTurn out and serve with butter or cream cheese. Or toast before applying spread. Makes 1 serving

Here's one that was just posted over on atkins dot com by a member there. 

MiM variation:
1/4 cup flax
1 egg
1/2 t baking soda
2 T sugar free maple syrup
1 t cinnamon or 1 tsp of Hershey's Cacao

Mix well and microwave in a coffee mug for 90 seconds.
