I couldn't finish them. They weren't awful...just different. Maybe a little at a time and I could get used to them.

I like cutting them up into a salad. Try that...just little bites at a time.

I might have to try that @sherryeB. Do you cut up the picked beets or regular beets for salad? If that's a crazy question then asking for a friend.

I like to roast fresh beets wrapped in foil, peel and slice them, then just sprinkle with vinegar, salt and pepper. Not so crazy about pickled beets

I use the pickled beets in my salad. I've only cooked fresh beets once... a friend gave some from her garden. I liked them but it's not something I think about buying.

My favorite! Try the small whole pickled beets in a salad - spinach greens mix, toss with vinegarette, add soft goat cheese, chopped walnuts, and the beets for toppings. For the vinegarette, use 1/4 balsamic to 3/4 EVOO with garlic powder, salt, cracked black pepper and brown sugar.
