Saw my new endocrinologist on Friday. He officially diagnosed me with Hashimoto’s. He also said my thyroid is inflamed and has multiple nodules, but he believes they’re from the inflammation and don’t warrant and biopsy at the point. He has prescribed Synthroid to balance my thyroid and recommended a whole food, plant based diet to reduce the inflammation. He said to stick to mostly beans, fruits, vegetables and nuts, with some whole grains. He also likes the idea of IF. I truly did not even know where to begin, but thankfully he recommended some books to help. Grocery shopping yesterday was rough. I wandered around forever not really knowing what to but even though I brought a list. Eating yesterday was easier. My breakfast a small bowl of oatmeal with a banana and cinnamon for some sweetness and some pistachios. Then I fasted for about 7.5 hours until I ate dinner which was some brown rice with black beans, corn, cumin, garlic, taco seasoning, and a little plant based cream cheese I found (it’s made from butter beans and isn’t too bad). I also drank about 70 oz. of lemon water. I’m really craving a big hamburger, but overall, I think I’m doing okay. Lol just taking it day by day.
