So for the first time, I made sweet potato "toast". I've seen recipes for it for a while now and finally decided to give it a go. It turned out ok. I think I need to refine the technique (as technical using a toaster can be LOL)


After reading a couple blogs of those who listed recipes & toppings, everyone recommends cutting slices of 1/4" thick, placing in the toaster on the highest level for at least 2x, three if needed. The outside is to be toasted while the inside is soft. The outcome for these was just that, but they were pliable which I thought they would be sturdy little plates since toppings are involved.


Some were flimsy and kind of slid down into the toaster so luckily I had small wooden spoons to reach down to fish out. Next time, I'm thinking I'll be better off using the toaster oven.



Has anyone on FS tried these? If so, got any tips? What are some toppings you might try?



Tonight we used fat free cream cheese and strawberries. I'd love to use a protein next. Tuna, green onion, sriracha. Salmon/avocado.

Wow!!! Looks wonderful and sounds like a great idea. It is fun to experiment. I want to try this. I never had it before so I cannot offer any suggestions...but I like this.

What a great idea!! Looks wonderful. My daughter about lives on sweet potatoes since she has a medically limiting diet. I will suggest she try this!
