I don't understand why I am dropping weight so quickly in the first week, it doesn't make sense. I'm not starving myself by any means, I feel full much of the day. I'm not complaining, but I am confused. I'm certainly expecting a plateau soon; cheat day is tomorrow, I'm sure that will put a speed bump in the stock market crash I'm looking at on the weight history graph.

Well, for one, you a man and men have more muscle so they tend to lose quicker than women. Two, the first week is usually a lot of water. How much depends on many factors. Maybe you were retaining a lot of water lately. No matter what, great job on the loss.
