My attempt at my Coach's protein pancake recipe wasn't too shabby for a first try. Next time, I will use a little less egg white. The first mixture came out like water. We only have gold standard whey protein, which is pretty finely milled so I threw out the first batch and used about 3/4's of a cup of egg white instead of a full cup. The Quest Protein powder is due to arrive this Tuesday, so next recipe may create a less runny consistency with regards to the batter. Cooking on a low temp is suggested with this recipe. That is exactly what we did, and it worked perfectly! I also dribbled a tablespoon of warm honey over it. Between that, the blueberries, and the chocolately goodness of the protein powder, it was perty good. And, yes folks those are indeed potatoes you see on the side. I haven't skipped my weekend potatoes since I started this journey 72 lbs ago. If I have a deal breaker food, I don't give it up - just find a way to make it work. This protein pancake will allow me to hit a high of 106 grams of protein today, which is landmark, because it's a "low-cal" day. As a maintainer, I zig zag my weekly allotment of maintenance calories. Getting in the protein can be challenging on the low cal day. My norm is 88 grams of protein on a low cal day, so this will be a significant boost and ensure I don't get hungry by the end of the day. And, yes - it really does lay in the stomach like a pancake does...LOL ;-)
