Yesterday was rough. Aggravating day at work, left late, left frustrated. Normally, I'd stop at McDonald's and get a Big Mac meal and have a glass of wine. I won't lie, I thought about it! However, I'm on this plan and fully committed (or should be committed one or the other). So, I go home and rummage through the fridge. I roasted a chicken Sunday, so there was some left. That was a good start and I built around it. Finally came up with the meal in the picture. Weird? Yes. Tasty? Yes. Most of all, it only put me .25 over my 20 carb day (I had less tomatoes then pictured, the husband grabbed some off the top while I was in the kitchen). The only thing {heavy sigh} I miss the wine. I think it would have gone very well with my salad. LOL :-) Well, I made healthy decisions, so I'm considering this a Victory!!

It IS a victory! It's so much harder to eat right and make healthy decisions when you're feeling down and things didn't go well during the day so PROPS TO YOU!!!!

Thanks for all the encouragement. I would have had the wine, but didn't have the 4 carbs left! I'm planning on it Friday - glass of white wine with my keto friendly pizza!! YEAH!!

That looks like what I had for breakfast this morning. I topped off my salad with a can of tuna and Newman's Own Balsamic dressing. A good choice!

That is some smart thinking! You deserve a huge pat on the back and a hearty, "Atta-girl". Every victory like that puts you closer to your goal, and makes the next one just a little bit easier. If you haven't done so yet, check on YouTube for Dr. Jason Fung. He has some great videos on diabetes and diet.
