Vege & Black Bean Coleslaw

Crisp and fresh vegetable slaw with black beans.

Ingredients

Directions

  1. Shred or chop all vegetables and mix in a large bowl.
  2. Drain and rinse black beans, add to vegetables.
  3. Blend vinegar and olive oil and add to salad. Mix well.
  4. Serve fresh or keeps well refrigerated for several days.

Reviews 
Needs some seasoning, so I also incorporated salt/pepper and some chopped jalapenos and bell pepper. The dressing of vinegar and EVOO was simple, yet delicious.
