Shirataki Noodle Soup

Light, flavorful and delicious. Ultra low carb and low calorie.

  1. Rinse noodles thoroughly, under running water while moving around to remove all package liquid.
  2. Add chicken broth to a pot.
  3. Add everything all at once, and simmer for 10-15 minutes.
  4. Adjust seasonings, adding salt to taste.
  5. Garnish with fresh Thai basil or cilantro.
  6. Note: miracle noodles can be used instead of shirataki noodles

I added green parts of green onion and doubled on the portion soy sauce for extra flavor. They are right! It is very very important to cut the noodles into smaller pieces or else they tend to stick together. The soup was very tasty!
