Honey & Olive Oil Glazed Slow Cooker Carrots

Tender carrots glazed with real olive oil and honey and slow cooked to perfection.



  1. Put carrot in a deep bowl (make sure to have enough carrots for each person to have 3/4 cup serving).
  2. Mix carrots with the olive oil and honey evenly.
  3. Add some salt and pepper if desired or any other spices like dill or oregano if you wish.
  4. Put in slow cooker and cook on low for 7-8 hours. Any left-overs can be refrigerated for the next night.

Just a side note! I am cooking these today using a 908g bag or 2lbs. 10 portions per bag at 85g servings. I modified the honey to 1.5 tbsp and kept the honey the same! Actual amounts of honey and oil is, in the end, a personal preference. Enjoy!

This is a perfect recipe for the Ancient European diet
Making these for my vegitarian daughter. I also cut honey way back (2 Tbsp) and used 2.5 cup orange carrots and 2.5 cups yellow organic (very colorful. Not the lowest of carbs but considering my families traditions it a way to start introducing heathier sides

Next time I would leave out the oil or cut way back - I also only used 2 Tbsp of honey. I loved it - other than the oily sauce
