Had a great day today! Church, then grandkids came this afternoon and are spending the night. I'll be worn out tomorrow...but today it was good. Tried a new recipe today - cauliflower casserole - and it was pretty good. I think next time I'll try to add some additional spices or something to liven it up a bit, but it was pretty good for a change. Maybe this whole Atkins experience will actually end up forcing me to cook again if I want to have any type of variety in my meals.

aaaarrrrrgh! I couldn't resist. Well...I guess I could have resisted, but I didn't. Who would have thought that sushi would have so many carbs????? :(

My plan today is to walk. Really. I just hope it is not unbearable hot. I'm also making it a goal to check out some of the many recipes on this site, as well as the Atkins site and book. I need to add some variety in because I'm fearful of getting bored. The good news is...after falling off the wagon this past weekend, I can tell I'm back in ketosis because I have absolutely no cravings, which continues to amaze me. Also, in the past I have had problems with low blood sugar when I get hungry, but so far I have experienced very litte hunger between meals and absolutely no low sugar symptoms. I LOVE when I learn about something and what I read actually turns out to be true! :)

Hanging in there. I'm back on track and now just waiting to hopefully lose a few more pounds. I'm probably just impatient, but still feel like I should be losing more. But...I guess since I haven't started exercising, I can't really complain. :( I'm bad. Other than that, was a great day! Started volunteering at the church food pantry. Humbling experience. Definitely made me thankful for all I have, including the many food choices.

Okay...my trip out of town was a disaster. But it also was a good experience because I found out what happens when you don't follow the "plan". I absolutely couldn't resist the blackberry cobbler with homemade vanilla ice cream. yum. But oh my gosh did I pay for it later. Talk about upsetting my tummy!!! The good news is that I'm back on plan and did not gain any. Just feel like I'm starting from scratch again.
