I have to get myself together. This new me takes a lot of work!! ha!

I really want to get that extra pound off by the end of the week, so I'm trying to be so good this week. But I'm sooo hungry!! Don't know what that's all about. I have just been ravenous for the last four or five days. It makes it really hard to stay on track. Trying to eat a lot of small meals...that seems to help me USUALLY. But I'm just off kilter a little. Nights are bothering me a lot. I always save a couple low-carb snack options for night...but I've been really bad the last few nights. I don't just want two snacks, as usual. I want EVERYTHING. And I'm thinking about weird things, like tonight I couldn't get bread with butter, cinnamon and sugar out of my head!! I haven't had that in YEARS. Why am I wanting it so bad now?? I still think it might be stress related....HOWEVER, I took two days off of work last week and got very caught up and am feeling much better about school. So I just don't get it. My struggles continue....

Anyway, I am going away for Valentine's Weekend. Me and some of my single girlfriends decided that we were going to get together that weekend. I'm really looking forward to it. Soooo...of course, I'd like to set a mini-goal for that time. Is it too much to try to be to 230 by then? 6 lbs? I am a slow loser, but I seem to do much better when I have a goal and push myself a little. So, I'm going to try it. So here it is:

230 by February 13th (that's the day I'm actually leaving)!!!

Since Sara's challenge is getting over in a few days, I gotta find me a new challenge to help me with this one!!

Being totally serious today. I am lucky that I haven't gained any as bad as I have been the last few days. But I really want to hit that 30 lbs mark and I only have 1 lb to go!!! So I gotta do this! It doesn't help that I'm swamped with school so I'm spending a lot of time at my computer. I haven't been moving much.

I made the most amazing soup last night. I have to figure out carbs for it. It is loaded with veggies - but totally legal. 1/2 head of cabbage, a few carrots (I kept those at a minimum since they are higher in carbs), four sticks of celery, a small onion and about two cups of diced ham. I also added rutabaga because I love the potato- like texture of them (but its totally optional). Loads of cracked black pepper, two bay leaves and 6 cups of chicken broth. That's it. Bring to a boil and simmer for about an hour. And it was amazing!!! Everyone in my house went nuts over it. If you like cabbage, you have to try this. Sound too simple - but it seriously was so good.

UPDATE: I figured the carb count to be about 7 carbs per serving - each serving is 1-1/4 cups. It serves six. That's just amazing!! I really thought it would be higher, but I did the math twice and both times it came out to be just below 7 - so I rounded it to 7!! Amazing!

2 eggs with 2tbsp sharp cheddar = 3C
1 cup of green tea with h/c = 0C

1 serving of cabbage soup = 7C

1 very small chef salad (about 5 bites, it was leftover!) = 2C

1 thick slice of salami = 2C
1 ounce of muenster cheese = 1C

TOTAL = 15C (so far)

I want to know everyone's opinions about picky eaters. My sister and I had this discussion yesterday because my 5 year old niece has developed into such a picky eater. My sister usually makes her try a bite of anything new, but she generally doesn't like it. And certainly won't eat it for a whole meal.

So my sister said yesterday, "I'm thinking that being a picky eater is not such a bad thing. I don't know too many picky eaters as adults who are overweight."

But I said that I do know a few. I know a few people that are very picky - one friend of mine, who is about 50 lbs overweight, won't eat any vegetables that aren't fried. She has had trouble dieting because she just doesn't like any of the foods she's supposed to have on a diet. I know another person who eats McDonald's about 5-6 times a week because "nothing else is as good." He won't eat salads and doesn't even like regular cuts of meats. He basically lives on hot dogs, hamburgers and chili.

On the other hand, I do know a few people who are picky eaters and are very thin as adults.

The one thing I know for sure is that, as adults, picky eaters really annoy me. I think it is such a sign of immaturity (I apologize to any picky eaters out there that are reading this - this is just my opinion, remember!!). I am so annoyed by a friend of mine who makes his kids eat their vegetables, but he hasn't touched anything but corn for over 20 years. And he is IMPOSSIBLE to order pizza with!!!

What do you think? Can you help us settle this argument? What are your experiences as picky eaters or knowing picky eaters as adults?
