For posting, I shall make a separate document, then copy and paste into the app. It may be the app that is making posting in my journal so difficult. It’s great for recording food, since with it, I do not have to use public wifi and wonder if someone is spying on me.


Today, I made enough lunch for two days. Tomorrow, a friend and I plan to drive down to Corpus. This is the best time of year to see the ocean. All the tourists have gone home, and the water is still warm. The purpose of the trip, however, is to see my friend, Frank, a Vietnam Vet.


Frank is a fighter. He won’t give up. In July 2016, the VA doctor found cancer. Then, they lost him in the paperwork. He never had the follow-up appointment they promised him.  In December, he started hounding them and their red tape until he finally got treatment late THIS summer, which was more than a year after the original diagnosis. Wow, I need to be more like Frank! I call him every week, and he is well.


I made a double lunch today, because lunch is my big meal. I considered fasting, but decided that fasting while socializing is just not fun. Keto Cabbage Stir-Fry is almost as good cold as it is warm. This time, I put a

little broccoli in it. It went well with the cabbage and onion. This is my favorite staple dish! I am collecting a number of dishes like this that I can throw together without thinking too much about it. It is basically meat, vegetables, spices, and homemade mayonnaise. The hardest part was making the mayo. It keeps for only five days, so I always make it fresh on Monday and kill it by Friday. Because I use Extra Virgin Olive Oil, it is not white. It is green. I find this amusing.

I have problems posting as well. Thanks for the tip of doing it in a document format then copying and pasting. Soooo much easier! You are doing so well. Safe travels to see your friend
