Didn't do so great lunch wise, I wasn't hungry so I ended up just having a snack a bit later but I did get plenty of net carbs from my veggies and didn't go past 20 even with the extra stuff. I experimented a little with my dinner tonight since I'm not really used to trying new things or cooking a variety of vegetables. My boyfriend is the experimental one when it comes to cooking :) Anyhoot, I sauteed 2 cups of cucumber (with peel) in olive oil and added only some salt and lemon pepper. I wasn't sure if I'd like the taste but figured pretty inexpensive if I really hate it. Though, to my surprise I found that I actually like it. It doesn't really have the cucumber taste anymore though I can't really describe it. Very tasty nonetheless :) Not to mention it gave me the carbs I needed to exceed the 15 veggie carbs I believe. All in all not a bad day, also didn't gain any weight so that makes me even happier.
