Holding steady. I had hoped to be out of the red zone by today, but I'm doing ok, and if it takes a little longer, I'll wait a little longer. Had an amazing dinner tonight! Not sure what my body was missing, but I made what I was craving. I made fresh green beans cooked with onions, new potatoes, and some amino acids, lima beans, and brussels sprouts sliced thin and tossed in a skillet with some walnuts, olive oil, salt, and balsamic vinegar. Best brussels spouts EVER! It was a very green dinner and it hit the spot! Then for dessert I made lavash bread and we dipped it in hummus. I've never heard of lavash bread, but saw a video recipe. It's an Armenian flat bread. Easiest bread to make, and it was so much fun stretching it thin enough that I could see through it. I'm a big believer that if you listen to what your body is craving you will get the necessary nutrients you need. I could be full of crap, but it seems to work. Unless you are craving sugar. Then you just need to tell your body to piss off, and not in a nice please leave me alone way either.

Just had to laugh with the sugar craving comment. Too funny, but true. Sounds like a wonderful dinner.

It was SO good! My daughter just looked at me and said everything is green. Um...yep. Enjoy! :D She loves veggies. Oddly enough she left the walnuts. They were great! They soaked up the balsamic and were tender and sweet and sour. My cooking style has definitely evolved over the last few years. I had to teach my girlfriend how to scramble an egg, so I do most of the cooking. I got tired of cooking the same stuff, so I just started opening the cabinets and dumping everything in a crock pot. Since I've been vegetarian, it's been more "oh man I'm craving broccoli", or "I'm craving tomatoes". I went on a fried tomato and greens kick last year. We had that about 3 times a week for a while. What are some of your favorite things to cook?

I go on tangents, I get a new cookbook, or see something on TV, try something I'll take off cooking say lots of Mexican, BBQ has been lately and smoking things, Italian,. Old standby is stir fry lots of veggies, add some beans or tofu for proteins sometimes some meat. This next week will be lots of veggies, little meat, if any fish. I tend to use my crock pot more in the winter for soups and stews. Just me most of the time.
