Are you eating items that contain a bunch of sodium? Or maybe your scale is broken... Have you tried weighing yourself 3 times in a row? Does it read out the same number?

I always weigh myself 3-4 times in a row, James who sits next to me also weighs himself on Mondays and his weight is steady (1-2lb changes week on week) so it seems the variable is me. As for sodium no more or less than I ever have.
