I know I know.....I'm only supposed to weigh in once a week but I felt really bloated when I got on the scale yesterday morning so I thought I'd just check again today!!! hee hee I was delighted to see almost another half pound off - hurray!!!

It's strange but this time round feels so much different. I don't know what has changed in my head but I really do feel like I'm not really dieting - I am just eating more healthily. And I can stick to this indefinately..... I also know that this state of mind can be very fragile and it is easy to become complacent and fall off the wagon. I'm doing my very best not to do that - just one moment of weakness...one Easter egg.....and the whole lot can come tumbling down around me.

Still, so far I am feeling strong. Since we got our chickens at the weekend we're getting surrounded by eggs - I had eggs for lunch and dinner yesterday(!) lol - I'll have to find some new egg recipes! Tonight I am either making the risotto or the lentil and veg curry from my WW recipe book and if things go to plan I am also making the minestone soup for lunch. I'll let you know how they turn out!!!

I know what you mean when you said "this time round feels so much different." This site is what made the difference for me. Just a few short months ago, you never would have been able to convince me that an internet site would play a key role in my weight loss and fitness success. I have a good way to use up eggs that is WW friendly - meringues! You can make them as bite sized cookies or as the base for some sugar free pudding and fruit for a lovely, guilt free dessert. I just bought some maple syrup flavored meringues at Costco yesterday and they are divine! Five of them are only 1 point! Aside from that, omelettes are a power packed breakfast that keep you from being hungry for hours. Or you could make some devilled eggs or add some chopped egg to salads or make egg salad sandwiches. Sounds like you are enjoying all the benefits from having your lovely feathered friends! SUPER! Yup, I'm with evelyn64...eggs are pretty easy to use up in SO many ways! You sound like a wonderful cook, too! I'd love to 'skip the pond' and come for dinner sometime! :O) Hugs to ya and THANK YOU for all your support you've given me! I'm in very much appreciation of you!

I was all down and angry when I weighed this morning and first logged on and journaled, but reading this is helping bring me back up again, so thanks! Since I'm semi-vegetarian, I do eat a lot of eggs for their protein. But all I can do is scramble them! I wonder if maybe we could put together some egg recipes for the cookbook here? I'd love to try some new things (especially the meringue cookies idea). Thanks for the upbeat posts guys. I needed it!
