I'm a stay at home Mom of 3. All of which are in school and I'm on my quest of losing this extra poundage and MOVING ON! I'm happily married to a wonderful, supportive husband that thinks I'm perfect the way I am. I need to feel that way to for MYSELF! I was on ww before and did well. I just have to get my head into it again. Hoping for some online support to help me along! GOOD LUCK to you all! YOU CAN DO IT!

"AROUND THE WORLD" (in 42 Days)
Mini-challenge of an snack...

Exclamation (From the WW cook book I LOVE!)Exclamation
Stuffed Portobello Mushroom caps
1 1/2 tsp olive oil
2 garlic cloves, minced
1 (5 oz) baby spinach
6 TBLS water
1/4 C plain dried bread crumbs
2 oz. lean cooked ham, finely diced
4 portobello mushrooms, stems discarded and caps wiped clean..

preheat oven 425...spray large baking dish with Pam...heat oil in skillet...add garlic cook about 1 minute...add spinach and 3 Tbls. water...cook until spinach wilts (4 mins or so)...remove from heat...stir in bread crumbs, ham...Place mushroom caps in baking dish, gill sides up...fill with above mixture...add 3 Tbls. water to baking dish...bake until mushrooms are tender and filling is hot...about 25 minutes...

1 mushroom cap is:
115 cals/ 4 g fat/12 g carb/ 3g. fiber/6g protein
2 POINTS for WW
