I've been pretty busy the last few days but haven't really had much to journal. I am pleased that the scale moved in the right direction a little I'll take whatever loss it will give me, as I've said before being slow will help me adjust to this as a permanent way of eating. This is the longest I have ever gone without eating bread or I should say grains because I've found some substitutes that have really helped me not to fell so deprived for the bread type stuff. It will help me to eat this way permanently.

By the way what oil do those of you on LCHF use to sauté with? I've read canola is ok and I read that it's not, I don't want to use olive oil all the time your input would be nice.

I hope everyone is having a nice weekend it's wonderful here we are having a little fall type weather here in the desert and I'm enjoying the baseball games even though my team didn't make it.

I use coconut oil. :) or sometimes Ghee (clarified butter, no solids). I also have and sometimes use, for variety, avocado oil. All of them can stand high heat, and don't go rancid, and are healthy for the body.

Coconut oil isn't suited for high temps, it has a smoke point of only 350F. You can saute at nearly any temp though, just need to know what setting to put your stove at and when your fat will smoke. Figure those things out, back of the stove heat by 1 notch/setting and you should be able to saute regardless of the oil you choose. I use coconut oil all the time to cook eggs, onions, veggies and what nots, just got to keep the food moving and the oil from smoking. Beef Tallow and Ghea having higher temps of 400F and 450F respectively. Peanut oil is high too at 450F. For some of the lower end fats, you'll end up burning them before they smoke too, so experiment with what works best.

I use olive oil or Kerrygold grassfed butter to saute veggies

I use coconut oil, toasted sesame oil, peanut oil or clarified butter to saute stir-fry veggies. Some times pan fry potatoes and onions and then I use olive oil with a little butter because I like the flavor better. Sometimes the coconut oil is a little too sweet for my taste and then I ad some garlic salt to what I am cooking as I prefer savory flavors.
