I have been sick more this year than I can ever remember in the past! About the time I'm finally over the crap of the month, here comes something else! I told my GM yesterday that I'm going to start firing people for not staying home when they're sick! Well, he asked if I was resigning since I was at work and not well.... Ok, maybe I overreacted a bit. 😳

One thing I've always made, or had made for me as a child, when sick is homemade chicken noodle soup, but that won't work for my WOE, so I took 2 bags of left over rotisserie chickens I did last week and tossed them into my 4-gallon pot along with some celery, onions, peppercorns, and a few bay leaves, brought it to a boil, and then let it simmer all night.

This morning, I turned it off, strained the stock, and then jarred it up. 3.5 gallons of water turned into just over 3.5 quarts of very rich stock, also known as, bone broth.... After it cooled to room temp in the jars, I put it in the frig. Well, I just went in to make myself a cup, and it's now gelatinous! I mean jello consistency! That's when you know that you've gotten ALL the good stuff from them bones!

This broth is easy on the throat, and really helps to open my head up. It may not be pretty to look at, but it sure is nice to have and easy on the body...

Beautiful color too! I have yet to get chicken jello but my Beef jello is bomb!

Jitterbug, get yourself some QUALITY poultry shears. With those you can at least crack the bones so the marrow is exposed. I cut as many bones as possible before putting them into the pot. This morning, they were almost mushy... For even better clarity, if that's what you want, strain through 4-6 layers of cheese cloth. I like the "bits" in mine.

I don't use any vinegar in my broth. I love apple cider vinegar, for many reasons, but I don't like it in my stocks. Others do, so experiment and see what works for you

Try it with your turkey carcass after thanksgiving. The crockpot on high is also a great method.

Looped, all bird carcasses get made into stock here. We use it in all sorts of meals, and side dishes. Sometimes I use the stock in place of water when I make homemade sausages. Keeps people guessing. However, until yesterday, I hadn't thought about just heating up a cup for therapeutic purposes.

I love bone broth when I am not feeling well (a couple days a week now)! And I use it in cooking a lot. It is very versatile! I laughed at your threat to fire all the sick people at work...I contributed to the germ pool at work too!
