It's Frittata Friday again! Just as last Friday, I'm going to have another Spinach and Artichoke frittata, only this time, as stated in last week's journal, I'll be adding some fresh baby spinach to the mix to up the spinach quotient in my frittata; it was pretty tasty then, it should be better this week.

very interested in how you prepare the artichoke. is it canned or fresh? i have never been able to prepare a fresh artichoke successfully.

It's jarred marinated artichoke hearts from COSTCO; all I do is weigh out the amount I want and chop it up to add it to my frittata. I've never prepared fresh artichoke either. Outside of a prepared artichoke dip, I've never had artichokes. My sister had an extra jar and gave me one; so I figured it might be a nice addition to a frittata.

Thanks for the light bulb. Making one now. Canned artichokes work well in a frittata as well!

I had every intention of making a frittata, this evening; however, the huge chef salad I'd made, for lunch, earlier today left me with no appetite, tonight, and no need to make dinner today. That being the case, I feel no need to force the issue; I mean, why eat if you aren't really hungry. So, I'll probably end up making it tomorrow, as I usually have half of it for breakfast before going to church on Sunday.
